Sirope de Algarroba Ibiza Gold
On the island of Ibiza there are literally hundreds of thousands of Carob trees, which traditionally provide one of the basic elements of food for a variety of farm animals, plus a profit by selling the seed. The decline of the farming practices of the past 30 years, coupled with the gradual decline of the market value of carob seeds during the same period have resulted in the abandonment of many carob plantations. Every year there are fewer families gathering in late summer and early fall to collect pods, and farmers can not hire anyone to help. Unless the value of the product can be increased, perhaps this very traditional local industry may soon disappear.
With the idea of reviving the production of carob on the island, while providing employment to more people outside the usual tourist season, the Green Heart team has invented several products based on a 'unique' toasted syrup, which was developed during the summer of 2006 in the model ecological center La Casita Verde. The syrup (which has been patented to protect the rights of manufacture) is made by boiling the carob flour in cool water, then cook until the liquid from roasting forms into a substance like molasses. The syrup is rich in iron, potassium, calcium, phosphorus, manganese, barium, copper, and nickel, plus many other healthy nutrients, can be used for a wide range of certified organic products locally manufactured for sale in Ibiza and export to other parts of Europe.
So far, the creations with carob syrup include a 100% natural coffee substitute, a soft drink (Coca-Cola type) made with oranges and lemons, several sorbets, ice creams, desserts and cakes. Along with the variety of sweets, Ibiza include other natural products such as almonds, figs and grapes.
